"Let's make Kumamoto's first ever refined sake that will become the face of this prefecture." By the 3rd year of the Keio era, our founder, Taihachi Yoshimura was already producing refined sake.
On the morning of New Year's Day in 1889, nearly 20 years later, this event occurred. Taihachi opened the door to the brewery to let the light shine in, when something flew inside. It was a hawk that flew into the brewery as he was chasing down a sparrow.
The hawk's flapping wings were majestic as it flew around inside the brewery. "A hawk on New Year's Day... What a lucky sight to see", thought Taihachi, as he felt a great sense of hope.
The name Zuiyo began here, making refined Zuiyoa sake meant for celebratory events both in name and reality.
